Double Choc Muffins

I thought I'd share a muffin recipe with you as they are totally delicious especially warm from the oven

Personally I'm not a fan of cocoa in cakes so if you are a lover of this then use 15g of cocoa instead of the 'cadburys highlights'. Using the cocoa will also make the cake appear darker
Double Chocolate Muffins
Ingredients

125g/4oz soft margarine
125g/4oz caster sugar
3 eggs
1 tsp vanilla essence
5 tbsp milk
200g/7oz self raising flour
1 sachet of cadburys highlights (22g)
12 squares of milk or dark chocolate


What to do

1) Set oven to 190c/375f/gas mark 5
Place the paper cases in the muffin tin
Beat the soft margarine and sugar together until light and fluffy

2) Beat the eggs, vanilla essence and milk together in a small bowl
Sift the flour and cadburys highlights into a seperate bowl

3) Beat a little of the egg mixture into the margarine mixture
add a little of the flour mixture.
Continue doing this until all of the mixture is together

4) Spoon the mixture into the paper cases until half full
Using the 12 squares of chocolate, put one in each muffin case

5) Spoon the rest of the mixture into the cases
Bake the muffins for 15-18 minutes until well risen and the tops are cracked
Cool slightly and serve whilst still warm so the chocolate is still gooey on the inside

On another note, I thought I'd share the glass bowl that the muffin was photographed in. Its one I acquired from my Mum (thanks Mum), I just love the detail of the pattern and I know once we move I'm going to find a home for all my lovely glassware collection that is building up nicely :)

  1. Ooooh thats so pretty Deanne...I love old glass too although I don't collect it. I have a beautiful 'Lazy Susan' in clear and green glass with little compartments for each kind of food you are serving xx
