Cheats Oreo Cupcakes

I've been wanting to make some oreo cupcakes for ages, today I made a cheats version, as I wanted something quick and easy but with a twist
1) because I'm using them to re-photo cake toppers and
2) the girls are coming round tonight for a Twilight movie session.All you need is a packet mix of victoria sponge (mine was from tesco) and a packet of oreo cookies, simple as that
Mix the victoria sponge to the instructions on the packet.
Add an oreo to the bottom of each cupcake case and pour your victoria sponge mixture into each case
Bake for about 15 minutes and cool on a wire rack

Add a topping, mine is basically, marscapone cheese, icing sugar, butter and vanilla essence, pipe on top and voila!I love how the oreo has stayed at the bottom :)

    Thanks for the recipe, I'm going to let my daughter make these at the weekend, I'd never thought about using a packet of sponge mix, it probably works out cheaper?
