Coconut Frangipane Tart

This is kind of adapted with store cupboard supplies but using a Jamie Oliver 30 minute meals recipe

1 shortcrust (or sweet) pastry case - ready made
1 egg
100g desiccated coconut
100g butter
90g golden caster sugar
1 orange
1 tbsp vanilla extract
good quality strawberry or raspberry jam
creme fraiche for serving

Make the frangipane mixture by adding egg into a mixing bowl and the almonds, butter and caster sugar. Grate 1/2 zest off the orange and add the vanilla extract. Use a spoon to mix everything together

Spread the jam over the pastry base. top with the frangipane mixture

Set oven to 190c/375f/gas 5

I cooked mine for about 40 mins but keep checking on it after 25 mins

Serve warm with the creme fraiche or its just as delicious eaten cold *trust me I've tried both ways* Enjoy x
